Steak Diane

You know? after the last time I cooked "Pepper Salt Fried Shrimps" I never cooked something special that worth to be written in my blog. But in this 2 weeks after I 'accidentally' watching "Gordon Ramsay's Kitchen Nightmare". I feel so exciting, I like him, I like how he's talking to people, how he's cooking... he's maybe little bit arrogant but I like him.... :)

Yesterday night I've tried 1 of his recipe which is "Steak Diane". although I can't make exactly the same steak, but I've tried to make it as close as I can.

Gordon Ramsay's Steak Diane with

sautéed potatoes and peas


Ingredients

· 4 x small sirloin steaks, approx 200g each, trimmed of rind and excess fat

· 3 shallots, peeled

· 100g chestnut mushrooms, cleaned

· 1 garlic clove, peeled

· Worcestershire sauce, to taste

· 1 tbsp Dijon mustard

· 50ml brandy

· 200ml single cream

· Small handful of flat-leaf parsley

· 300g peas (defrosted if using frozen)

· Approx 30g salted butter

· Olive oil

· Salt and pepper

For the sautéed potatoes:

· Approx 500g-600g small Charlotte potatoes, cut in half

· 2 garlic cloves, peeled

· Few sprigs of rosemary

Method

1. Parboil the potatoes in boiling salted water for 4-5 minutes or until just tender. Drain the potatoes and set aside.

2. Using a rolling pin, roll out the steaks to flatten and cut off the rind of fat. Season the steaks on both sides with salt and pepper.

3. Heat a little olive oil in a heavy based pan. Quickly sauté the steaks on both sides for approx 1 minute to colour, then remove from the pan and set aside to rest.

4. Bring the same pan back up to temperature and add a little more oil if necessary. Slice the shallots and mushrooms add to the pan, season with salt and pepper and sauté briefly. Crush in the garlic and stir .

5. Add the Worcestershire sauce and mustard and heat through for 1-2 minutes. Tilt the pan away from you, pour the alcohol into the far end and allow it to ignite. Once the alcohol has burnt off, swirl the juices around the pan. Pour in the cream and add the steaks and any resting juices back into the pan. Allow the steaks to heat through for 2-3 minutes. Chop the parsley and sprinkle it into the pan.

6. Introduce the steaks back into the pan and cook for 2- 3 minutes (depending on how well done you like your steak).

7. Heat a little oil in a separate pan and add the potatoes. Season with a little salt and pepper and add the rosemary. Crush in two garlic cloves and sauté. Toss the potatoes, add a knob of butter and sauté for a further 1-2 minutes until golden and cooked through .

8. Cook the peas for 2-3 minutes in boiling salted water with a little butter. Drain, and keep warm.

9. To serve, transfer the steaks to serving plates and spoon the sauce over. Arrange the sautéed potatoes and peas alongside.

Pepper Salt Fried Shrimps

Today, I cooked fried shrimps with chili which is shrimps fried with garlic, salt, pepper and of course (a little bit) chili. not so complicated but it taste good for me because I didn't like spicy on my food.. And let me regret that because I feel hungry and I forgot to take some photo of the shrimps. But this is the recipe:

Pepper Salt Fried Shrimps

Ingredients:

15 pcs shrimps
pinch of pepper and salt
2 Tbs Butter
1 Tbs Dried chili (or you can use 2 pcs cayenne pepper)
3 cloves Garlic


Method:

1. Put butter in small frying pan over a medium heat. When the butter melted properly, put crushed garlic, cook until garlic turn gold.
2. Add chilies, stir until it becomes smells-good.
3. Add shrimps, stir properly, add salt and pepper. continue cooking until the shrimps turns pink. turn the pan and slide off onto small plate.
Enjoy it...!!!

Very Simple Omelette

I cooked very-very simple omelette for my dinner which is 2 eggs that’s been whipped into a frenzy with a little bit salt and pepper until it’s mix together.

Very Simple Omelette for 1 Person


Ingredients

2 Eggs

Pinch of salt and pepper

Knob of butter


Method

1. Crack the eggs into a bowl and mix together with a fork. Add salt, pepper and beat again.

2. Put a knob of butter in small frying pan over a medium heat. When the butter melted properly, pour the egg mixture into the centre of the pan and cook for approx 1-2 minutes until egg mixture is set.

3. Cook the omelette for approx 1 further minute then grab and start tilt the pan until the edges of the egg was loose then jerk the pan until the eggs goes to the side of the pan. Turn the pan upside down and flip the omelette off onto a warm plate.

Enjoy it...!!! ^^

hi, it's nick.
maybe you recognize me as a photographer. but yeah, I have another passion in cooking! I love to eat and I love to cook! unfortunately kitchen in my apartment in NZ is not suitable for a amateur chef like me. but nothing can beat my passion of cooking. actually I was inspired by a movie titled "Julie and Julia". you guys should watch it, coz it is kinda an inspirational movie and after watching that movie, a question was popped out in my head
"why don't I create a cooking blog?"
and here it is, a simple cooking blog, created by an amateur chef, Nicky Rahardjo.
Don't expect advanced recipes posted here, guys. I JUST learn how to cook. but as time goes by, hopefully I can become an advanced chef.
